The thin brown loam top soils lie over a seam of ancient marble and ironstone, producing low yields of small berried Grenache. The fruit is harvested and destemmed, and fermented for 7 – 10 days with twice daily pump overs. The wine is basket pressed to a combination of seasoned French and American oak hogsheads for 8 months maturation prior to bottling. We retain whole berries in the ferment to add juicy red jube characters into the wine that balance the white pepper notes from an extremely cool ripening season. On the palate, raspberry and mulberry fruits intermingle over powdery tannins. It also allows the rustic, ferrous aspects – a key part of this grape’s make-up - to reverberate in the background while the fruit intensity rises to the fore.\u003c\/p\u003e\u003cp\u003ePacked with spice and sporting a swell of ripe dark and red plum, black cherry and boysenberry fruits with a seam of exotic spice and no shortage of earthen tones and meaty nuance. There's some nice raspberry pip lift in there, too, along with dried meats, kombu, dried citrus rind and crushed rock.
